Our animals are heirloom varieties selected for taste. The beef cattle are Angus, our hogs Berkshires. All our livestock are pastured whenever possible and fed forages to maximize their good health. All our animals are given free access to the land with free choice grains and minerals available to them. No hormones or antibiotics are ever used, and our herds and land are certified organic. We are adamant about treating our animals as humanely as possible and providing them a very healthy life. Using our local, organic abattoir (butcher) in Lone Rock, Wisconsin, we have created a Wisconsin-only brand of organic, highest quality meats called Local Choice. Local Choice provides basic processing of beef and pork into our very popular brats, breakfast sausages and hamburgers.
In addition to the Local Choice sausages, we have also formed a unique partnership with Metcalfe's Sentry Foods. The reality of the meat industry is either that you are very small and sell direct to customers at farmers' markets and over the internet, or you are very large and can provide only the choicest cuts to customers, using the trim in other products. If you are somewhere in the middle, you are stuck.
We were lucky to find Metcalfe's Sentry. The Metcalfe brothers own two Sentry groceries, one in Hilldale (Madison) and one on State Street in Wauwatosa (Milwaukee). They have an oustanding butcher shop within their store, and were willing to explore “local foods.” We are just big enough to provide them with meat year round for the two stores—and they have the meat cutting skills and customer base to use the entire animal economically.
From that rare pairing of size and interest, we formed a project where our pasture grazed Angus steers and Berkshire hogs are taken from our farm to Black Earth Meats for slaughter, then to Metcalfes. For those counting your food miles, if you buy an Otter Creek steak from Metcalfe's, the animal will have traveled only FORTY-FOUR MILES from birth to butcher.
