Otter Creek seasonal Cheddars are great cheeses for snacking, for your cheese course (after the main course and before dessert), and they are wonderful for cooking. They add full rich cheddar flavor to everything!
Butter both sides of the outside of the bread, splash some olive oil on a griddle and put a slice of bread on the griddle, butter side down. Top the bread with thick slices of Seasonal Cheddar and the other slice of bread, butter side out. Turn when golden brown and just before removing from the griddle, add a splash of water. This makes everything crispy-soft.
Serve with roasted heirloom tomato soup.
